Butterscotch Fudge

Ellen says: We all love to eat Butterscotch Fudge,no wonder that my three kids keep on asking for me to make this for them. I always wanted to share recipe, so that other may realize how simple to create a mouth watering fudge

Butterscotch Fudge

1 cup granulated sugar
1 cup brown sugar, firmly packed
3/4 cup sour cream
1/2 cup butter
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts, toasted

Combine sugar, brown sugar, sour cream and butter in a large heavy saucepan. Cook over medium heat, stirring constantly, until sugars dissolve and mixture comes to a boil. cover and cook 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook until mixture reaches the softball stage or candy thermometer registers 240*F (115*C), sitting occasionally. Remove from heat, and let cool 30 minutes.
Add vanilla, and beat with a wooden spoon until mixture thickens and begins to lose its gloss. Stir in pecans. Pour into a buttered 8-inch square pan. Cool completely. Cut into squares.

Healthy Ranch Dip Recipe



Ellen says: Would you like your kids to eat more veggies? Include some of these healthy dips in their school lunch or at dinner and they'll love veggies! Serve this dip at parties with veggies or baked chips for a healthier dip option.

Faux Healthy Ranch Dip Recipe

Ingredients:
2 cups fat free sour cream or 2 cups low fat plain yogurt
one package of Ranch dressing mix

Or make your own ranch dressing mix with:

1 tablespoon white vinegar
2 tablespoons minced, fresh parsley
2 tablespoons minced, fresh dill
1/2 teaspoon garlic powder (or 1 clove garlic, crushed)
2 tablespoons grated onion (optional)
Salt and pepper, to taste

Directions:
Mix ingredients thoroughly and refrigerate for at least one hour so ingredients can blend. Serve with veggies of your choice.
